Southwestern Black Bean Burgers with Guacamole

The Super Bowl is coming up in less than two weeks, and that means lots of partying and grazing around the buffet table.  There is nothing more Texan than grilling some big juicy burgers and watching football on Sundays. Even though we may be watching the game (I don’t know who I am rooting for, but I will let you know after I see who wins), we probably will not be throwing any beef patties on the outdoor grill, but instead we will be hanging out in front of a fire, chowing on these delicious black bean burgers with guacamole and all the fixin’s. If you are lucky enough to live in a lovely warm place where winter grilling is possible and the Super Bowl commercials are broadcasts during the game, you can count your blessings, and cook these at your Super Bowl party on the grill.

Southwestern Black Bean Burgers-Makes 4 Large Patties

1 can black beans, drained and rinsed

2 cloves garlic

½  jalapeno, seeds removed

¼ cup frozen corn, thawed

1 large egg

¾ cup whole grain bread crumbs (I used spelt)

1 teaspoon ground cumin

1 teaspoon chili powder

¼  teaspoon salt

Place everything into a food processor and pulse until the beans are mostly pureed.  Form the mixture into 4 equal sized patties.

Grill over medium heat in a pan, griddle, or outdoor grill for about 10 minutes, flipping once halfway through. Serve on a bun with guacamole (see recipe below) and your choice of bun and toppings.  I used whole wheat buns, lettuce, tomato and red onion.

Jalapeno and Lime Guacamole

4 Avocados

1 jalapeno, seeded and very finely diced

½ lime, juice

¼ teaspoon salt

Remove the Avocados from their skins and place in a medium-sized bowl.  Mash the avocados with a fork or a whisk until there are no large chunks.  Stir in the jalapeno, lime juice, and salt
