Happy Valentine’s Day Eve! Here is a great chocolatey recipe that is as quick as it is healthy. They have really been a life saver to me the last couple of days! I am the first to admit that my schedule is pretty chill, but it seems that this past week I have been running around constantly. These little morsels are just the thing to pop in my bag to for an post-workout pick me up or to take with me running errands. They are vegan, paleo, gluten-free, and just plain delicious!
Chocolate Cherry Energy Bites (Vegan, Paleo)
makes about 2 dozen
2 cups raw pistachios
2 cups dried cherries, soaked for 15 minutes
2 tablespoons coconut oil
2 tablespoons organic cocoa powder
1/4 teaspoon sea salt
In a large food processor, process the pistachios until crumbly. Set aside a small handful of the pistachios on cookie sheet lined with parchment paper. Add in the cherries, coconut oil, cocoa, and sea salt and process again until a sticky, uniform batter is formed.
Scoop out about a tablespoon of dough, then roll between your hands to form balls. Roll the balls through the chopped pistachio, and arrange them on the baking sheet. Place in the freezer to set for about an hour before serving. Store the balls in a sealed container in the fridge for a week.
It’s better than a box of chocolate because you know exactly what you are getting, a healthy heart!
