These chickpeas are light, bright and refreshing. The perfect protein boost to recharge after a sweaty workout, or to pack in you bag for lunch on the go.
You can serve this up any way that you want. For lunch today, I paired them with brown rice and slices of avocado, but it would be just as lovely with some quinoa or wrapped up in a corn tortilla. Anyway, it is fresh and delish, just don’t leave out the avocado slices, they are a must.
Cilantro Lime Chickpeas:
- 1 can of chickpeas, drained and rinsed
- 1 cup of fresh cilantro leaves
- 3 cloves of garlic
- 1 fresh Serrano pepper, seeded
- juice from 1 lime
- 2 tablespoons extra virgin olive oil
- Avocado for serving
In a food processor or blender, blend the cilantro, garlic, lime juice, and olive oil. Place the chickpeas and cilantro lime dressing in a Tupperware type container and shake it like a Polaroid picture! Serve with the avocado and grain of your choice for a complete protein.
